For the first time on the Café Pista menu, we present to you a Gesha variety coffee! This variety originally comes from the village of Gesha, in Ethiopia. Subsequently introduced to Central America, notably in Panama, it gained popularity after winning several coffee tasting competitions. Renowned for its exceptional and complex flavor profile, Gesha is a variety of coffee that is difficult to grow. It requires specific conditions of altitude, climate and care to produce its distinctive characteristics. Additionally, yields from coffee trees are lower, which contributes to its rarity and market value. That’s why we’re so excited to introduce you to this imported coffee using our friends Apex Coffee. 

This coffee comes from producer Raul Perez's El Llano farm in Acatenango, Guatemala. Raul is a coffee producer passionate about innovation, quality and sustainability. His El Llano farm covers 45 hectares and rests in the shadow of the El Fuego volcano, alongside 45 hectares of natural forest reserve. This lot of Gesha is an exceptional quality representation of this variety when grown in Guatemalan soil.  

It is picked when fully ripe and sorted by floating first, then by hand, in order to remove overripe or underripe cherries.  It is then pulped and fermented dry in sealed tanks for 42 hours. Finally, it is washed and dried on raised beds for 25 days until the humidity reaches around 10.5%.

This coffee offers a traditional flavor profile of the Gesha variety. Impressively clear, it reminds us of jasmine, peach and lemongrass.
